The Canadian Government and CFIA is abundantly clear on the guidelines and protocols for extracts.  As a result of our choice to formulate this differently than their guidelines, we are required to explain the difference and offer an alternative name so that people know they are not purchasing an extract.

Extracts per the government definition must be made with a pure alcohol (Everclear - effectively chemical grade moonshine); to avoid working with such an extreme solvent, and to ensure that the flavour of our infusions can break through the strength of the alcohol, we have formulated our baking infusions with consumer grade alcohol (vodka mostly, bourbon for our vanilla products).  This takes a considerable period of time, patience and above all else an extremely high quality base product to infuse the flavour.

These baking infusions are meant to be used in the same scale as you would an extract for your recipe; simply substitute the extract in the recipe for the same amount of our baking infusions for best results!
